Supervise, coordinate & participate in activities of cooks & other kitchen personnel engaged in aesthetically pleasing preparation & cooking of Japanese cuisine Sashimi Donbury, Salmon Skin Salad, Chilean Seabass, Chirashi, Spicy Yellow Tail Sashimi, Seared Albacore Tuna, [Dragon roll, Fire Roll, Vegas Roll, Crunch Scapp Roll, Popcorn Lobster Roll, Human man Roll, other Rolls such as Red Dragon, Cal. Tempura, Lion, Crunch, Kyoto, Calamari, Spicy Tuna, Hurricane and Lobster Crab Tempura Rolls], as well as baked rolls and other seafoods specialty dishes.
Observe and test foods being cooked by tasting, smelling and piercing with fork to determine that it is cooked. Observe workers engaged in preparing, portioning & garnishing foods to insure that methods of cooking, garnishing & sizes of portions are prescribed. Plan menus.
Give instructions to cooking personnel in fine points of cooking such as combination of special blend of spices & herbs to marinate & create special flavors. Cook & carve beef, pork seafood and chicken meats, prepare dishes, during rush periods of business or social events. Estimate food consumption and supplies used. Requisition or purchase foodstuffs.
